Not much of a traditional holiday, but I've gotten used to missing holidays since being here. No colorful eggs, no savory ham, no Easter basket filled with Butterfingers chocolate eggs (I guess the Easter Bunny can't swim.)
But hey, a day in the sunshine on the Mediterranean Sea? That doesn't sound so bad.
Two of my roommates, Laura and Sabela, are home with me today, thank goodness. So we decided to do something special for the occasion: An Easter Sunday dinner. And what would be more appropriate for their American friend to cook for them for this traditional holiday feast? Well, tacos of course.
So tonight, as Laura, Sabela, our friend Mario, and I eat our delicious, fried tacos, we wish you a Happy Easter from our humble abode in Spain.
